Microsoft doesn't offer an easy “off” switch for Copilot in all cases, unless you're an admin on a Microsoft 365 Business/Education plan.
If You’re an IT Admin (Microsoft 365 Enterprise / Business):
You can disable Copilot via Microsoft 365 Admin Center or Group Policy.
Option 1: Disable via Microsoft 365 Admin Center
Go to: https://admin.microsoft.com
Navigate to Settings > Org settings > Microsoft 365 Copilot (or search for “Copilot”).
Turn off Copilot for specific apps or users.

Workarounds:

Right-click the ribbon → Customize the Ribbon
Uncheck “Copilot” or drag it out of your tabs
Click OK
This hides the icon but doesn’t fully disable the service.
