The term Schwenker can be used in three ways, all relating to the same grilled food.
- Schwenker or Schwenkbraten is a marinated pork neck steak which originates from the Saarland and is grilled on a Schwenker. Normally either a green herb or red pepper marinade is used when preparing Schwenkbraten. Traditionally, Schwenkbraten consists of pork, but turkey variants are available as well. Schwenkbraten are about the size of one or two hands in length and are about 1 cm to 3 cm thick.
- A Schwenker is a grill on which the Schwenker steak is typically prepared. The Schwenker has 3 legs and a swinging grill. Schwenkers are sometimes created from various handy materials in an impromptu fashion, but "Schwenk-Grills" can be purchased in local supermarkets (like Globus), and in DIY stores.
- A person who operates the Schwenker grill is known as a Schwenker.
The process of grilling the Schwenker is known as "schwenken", which not only describes the grilling process itself but also the social event which surrounds the grilling activity. In the Saarland one would not be invited to a grill party, but would instead be invited to a "schwenken".
Charcoal is not used during schwenken; cooking is instead done over an open beech wood fire.
Various side salads (usually a noodle salad, a potato salad, and Flûtes) are served with Schwenker. Many prefer specific beers (Karlsberg Urpils from the Karlsberg Brewery in Homburg Saar) with their Schwenker.
